Honey Cake has become a classic cake of Russian cuisine. Its history goes back over 200 years and is connected with a beautiful legend.
They say that the first "Honey Cake" was created in the 1820s by the personal chef of the wife of the Russian Emperor Alexander
The First is Elizaveta Alekseevna did not like honey, all the court chefs knew this and never used it in recipes.
However, there was a young and ambitious young chef who had just been hired in the palace kitchen. Probably, he wanted to be noticed,
to surprise everyone with his talent, to become famous. An order came in to create something new. Many desserts were served at the
table, but it was the chef's cake that was highly appreciated by the Empress. Layers of the most delicate dough and classic custard
literally melted in your mouth. It is believed that the layers were so thin and moist that they tasted like soft caramel. When the
Empress inquired about the composition of the cake, the young chef was unable to answer. It was only after filing that they told him
about Elizabeth's dislike of honey. However, when he confessed that it was honey cake, the Empress only laughed and ordered to reward
the brave man. Since then, "Honey Cake" has become Elizabeth's favorite dessert and was present at every royal feast.
